The real question you're facing is whether or not you've got the reflexes. Gankers are used to rapid response, and they know where their targets are. You won't know when they're coming, or who their target is, so you're going to need superior reflexes and good intelligence. And a lot of patience. If you try to pre-empt them, you give gankers kill rights on you - Hilarity *will* ensue. You may even get Concordokken yourself, which is a bit humiliating (have done that my own self; I know whereof I speak). If you wait until they're flashy, you've got bare seconds in which to react before concord shows up to spoil your fun.
The good news is that a properly-fit Insta-locking boat with long-range weapons - even a frigate - can pop a gankalyst with ease. *If* you get there before Concordokken happens. Maybe you can try to pop their pods - If you're fast enough, and if they're slow enough or dumb enough to give you a chance to engage or scan them down. Don't count on it.

THAT^^ is your number-one defense against being ganked - alert, aware of who is in local (and what their KB says about them!), moving at all times with turn points and multiple safes in all directions, and checking intelligence. THAT is how you mine without getting bored OR ganked - by being engaged, and continually checking the surroundings.
I'll grant that it's work, but who's afraid of a little work, eh? |

If you're in HS, there's no need; Concord will do all the webbing and scramming needed. So trying to set up baitship barges in HS is just... bad. |
